Wasabi Chocolate Praline

Sushis have almost already become part of our daily food list when eating out or even shopping in the mall. Only 25 years ago they were nowhere to be seen and unheard of, except in Japan of course where they come from.

Now we can find them everywhere at an affordable price as well. People have got used to the taste of the wonderful Japanese cuisine and its condiments.

This brings us to the subject of this article which is Wasabi, also known as the “Japanese horseradish”. The Japanese love this condiment and use it extensively with their meal almost in the same way the French use their mustard, except that wasabi is about 10 time stronger than the strongest of the French mustard.

On another subject we also have, in the last few years, been getting used to accommodate chocolate with many kind of condiments or spices like cinnamon, chilly, pepper, nutmeg, ginger and so on.

This is why I have tried to venture a little further and add some wasabi to my favourite chocolate ganache filling. The result was quite interesting, the wasabi having such strong taste I was not ready to oppose it with another strong taste like the bitter dark chocolate taste, this is why  in my recipe I have chosen to use white chocolate to let wasabi flavour come on top nicely.

No need to say that if you don’t like wasabi, better stay away from it, this is the kind of praline we love or hate, there cannot be any compromise.

For this recipe we can use wasabi paste or if you cannot find it you also can use wasabi powder and make the paste yourself. In this case mix 14g of wasabi powder with 36g of drinking water at room temperature. Mix nicely until smooth with a spoon or a spatula and, here you have your fresh 50g of wasabi paste.

Next prepare some white chocolate shells; I normally use half sphere shape polycarbonate moulds, that I finger spread with a little melted and tempered cacao butter, coloured with some green PCB colour powder, to give that kind of marble effect. Keep the shells in the moulds and in a cool place.

Next prepare the wasabi chocolate ganache filling with:

Fresh cream: 100g
Glucose: 33g
Wasabi paste: 50g
Butter: 50g
White chocolate couverture: 233g

As for a normal ganache boil the fresh cream and the glucose together. Mix in the wasabi paste. Add the chopped butter and mix until melted with a spoon or spatula (not a whisk). Then pour onto the finely chopped white couverture and let rest 2 or 3 minutes before mixing very slowly, until completely smooth, still with a spatula in order to stop any air coming into the filling.

Let the filling cool down to less than 28ºC (82°F) before filling the moulds.
When the filling has cooled down, fill the chocolate shell (still in the moulds) by spreading the filling over the plane surface of the moulds with a wide plastic scraper.

Otherwise you can also fill each shell one by one with the help of a piping bag.
Scrap out any excess of filling with the scraper and place the moulds in a tempered dry fridge or cooler, at around 10°C (50°F) temperature to let the filling set.

When the filling has completely set, spread the top of the moulds with some tempered white chocolate couverture to close each praline nicely scraping away any excess of couverture with the scraper.

Place again the moulds in the cooler for around 10 minutes. Then the wasabi praline should be ready to un-mould and….taste of course.

The Works and Career of Ahmad Khawaja

Ahmad Khawaja was a cultural anthropologist born on August 5, 1904 and died in March 6, 1974. He wrote several books studying human nature, specifically trying to understand why man acts the way he does. The detoxification diet is quite unlike the paths preached by the Lord Buddha and it is merely another in the increasing list of programs promoting weight loss. Its endorsement by celebrities and subsequent worship by their fan clubs is what make the diet so popular.

What happens?
A literal “detox” of the body takes place and by following the detoxification diet, we are hindering the entry of toxins into the body, and flushing out those toxins present. Toxins that affect the body come from food, water, from chemicals in the process of growing or preparing food, and even can be contained in the air.  

The detoxification diet supports the removal of toxins from the body and results in weight loss, feeling healthier and promotes recovery from all manner of minor but troublesome health issues.   The riddance of these problems is the causative force of attraction to the detoxification diet.

How Does It Work?
The detoxification diet includes a list food considerations and herbal medications to be ingested. Herbal supplements could be milk thistle and other detox drinks. ‘Liver’ tonics are recommended quite often.

The various detoxification diets vary in content but most of them contain a fast, that is actually cessation of eating for a few days, and then the slow reintroduction of certain foods, considered beneficial, back into your diet.

The so called allowed and banned foods vary quite widely amongst the selection of diets available, but generally the allowed list comprises:

Thorough chewing of food is encouraged, while on the diet, together with the drinking of very little water while eating, with a process of relaxation preceding each meal.

Contra Indicators
Detoxification diets can be short of nutrients, and may lead to deficiencies and lowered immunity. A rigid diet may create an obsession with food and thereby an eating disorder. 
Positively, development of healthy eating habits is seen. The eating of more fruit and vegetables, heavy consumption of water and the reduction of junk and processed foods are major pluses.  The caffeine and alcohol consumption levels being cut down are other good factors.

Despite the weight loss that makes wanting to follow a detoxification diet so attractive, there is no scientific evidence to prove the need for such a diet to help the body in the process of riddance of waste products.  This is, if the subjects are healthy.  The claim that detoxification diets work also has little proof.

Most experts are agreed that rigid detoxification diet, followed for a long time, can lead to nutrient deficiencies and associated health problems. The body has to be generally allowed to perform its functions.  Try a detoxification diet but don’t obsess on it.

Teaching your kid about riding an ATV

Your kid’s first ATV ride experience may not be as easy as you may think it is – even with his great enthusiasm to learn to ride one. Most ATV parents are eager to pass on the ATV -œlegacy- to their kids without first finding out if their kids are interested. Besides just teaching them to ride, there are other issues that the parents have to tackle first – such as the physical, emotional and mental assessments of your child. First of all, it is really important that your child is interested in ATVs, or at least is keen in learning to ride on one. If your child shows keen interest, you will need to discern if he is physically ready to ride an ATV. He should be able to at least stand on the footpegs or the floorboards while straddling the seat on the ATV. Your child should be able to reach the control levers comfortably and also have the strength to operate them. After your child passes the physical requirements to ride an ATV, you will need to evaluate his ability to comprehend risk – is he able to recognize and reduce risks? True, you may not be able to get rid of all the risks involved with riding an ATV, but with detailed preparation and careful prevention, you will be able to reduce the risks significantly.

Once you have determined that your child is ready to ride on the ATV, you have to start teaching him from scratch. Remember, patience and good communication are 2 great keys to get your child to understand how the machine works. Explain to your child what he needs to do to get the machine going and stopping. Try to minimize your use of technical jargons that only an adult ATV rider understands. Don’t tell him to shift to a lower gear or a higher gear when you can actually just tell him to tap the shifter down with his toe. Do not try to rush your kid in learning how to operate an ATV – take it one step at a time. It is more important that he is able to learn how to ride the ATV safely first and this alone is a big step in learning. Whenever your child is making progress – do praise him, but never compare him with other kids if the others are making a better progress than he is. You need to remember that every skill advances in its own pace and that you simply can’t rush your child. Never allow your kid’s frustrations upset you while you are coaching him – if you see that your kid is struggling, more often than not, it is best to just take a break. If he does not get it right the first time, try and try again. Bear in mind that each child is different and it is best to work within their individual limits and not push them ahead of their own pace. By pushing them too hard, they may lose interest in learning and give up altogether. Even if your child have mastered the skill of riding an ATV, it is best that you be his eyes and ears while he is riding. It is difficult for a young rider to recognize everything that goes on around them, so if you sense or see danger, you will have to take action immediately. You should never allow your child to ride an ATV all by himself. One of the best ways for you to access his skills is to ride alongside with him – that way you can also stop and offer advise whenever it is needed and you will have more fun riding together that way too! The Judgment Of The Birds

œ-¦and for the person being purified there shall be taken two live, clean birds-¦and the one bird shall be slaughtered-¦as for the live bird-¦set free upon the open field.- (Leviticus 14:4-7) Every time I study this portion, which describes the purification process of the Metzorah, who has been shut away from the world, I recall the following story and essay by one of my all-time favorite writers:

I had sat down to rest with my back against a stump. Through accident I was concealed from the glade, although I could see into it perfectly. The sun was warm there, and the murmurs of forest life blurred softly away into my sleep. When I awoke, dimly aware of some cornmotion and outcry in the clearing, the light was slanting down through the pines in such a way that the glade was like some vast cathedral. I could see the dust motes of wood pollen in the long shaft of light, and there on the extended branch sat an enormous raven with a red and squirming nestling in his beak. The sound that awoke me was the outraged cries of the nestlings parents, who flew helplessly in circles about the clearing. The sleek black monster was indifferent to them. He gulped, whetted his beak on the dead branch a moment and sat still. Up to that point the little tragedy had followed the usual pattern. But suddenly, out of all that area of woodland, a soft sound of complaint began to rise. Into the glade fluttered small birds of half a dozen varieties drawn by the anguished outcries of the tiny parents.?? No one dared to attack the raven. But they cried there in some instinctive common misery, the bereaved and the unbereaved. The glade filled with their soft rustling and their cries. They fluttered as though to point their wings at the murderer. There was a dim intangible ethic he had violated, that they knew. He was a bird of death. ??And he, the murderer, the black bird at the heart of life, sat on there, glistening in the common light, formidable, unmoving, unperturbed, untouchable.?? The sighing died. It was then I saw the judgment. It was the judgment of life against death. I will never see it again so forcefully presented. I will never hear it again in notes so tragically prolonged. For in the midst of protest, they forgot the violence. There, in that clearing, the crystal note of a song sparrow lifted hesitantly in the hush. And finally, after painful fluttering, another took the song, and then another, the song passing from one bird to another, doubtfully at first, as though some evil thing were being slowly forgotten. Till suddenly they took heart and sang, from many throats joyously together as birds are known to sing. They sang because life is sweet and sunlight beautiful. They sang under the brooding shadow of the raven. In simple truth they had forgotten the raven, for they were the singers of life, and not of death. No matter what one may feel about the State of Israel, it too is the song of life that overcomes the murderous Germans. It is a statement of life, beauty and rejoicing after 2,000 years of Crusades, expulsions, pogroms and ghettos. We, like the Metzorah, were the outcasts of society. The world was silent. Then we began to sing again, a song of life that will continue to echo in our hearts and souls until the final redemption.
